The Red Gold of the Monts du Lyonnais

Produced mainly in Spain and the mountains of Iran, saffron is also grown a few kilometres from Lyon !

Sophie took over the Safran des Monts du Lyonnais farm in Pollionnay two years ago. It’s a 1,200 m² saffron farm planted with approx. 10,000 crocus sativus bulbs. 

Originating in Crete, saffron farming spread far and wide over the centuries round the entire Mediterranean basin. 

Considered a spice, it is the result of pruning and drying the pistil of a very specific crocus that doesn’t grow in the wild and flowers in October.

To produce 1 gram of saffron (€35) you need around 150 flowers and three hours of labour. 

It’s particularly recommended for flavouring rice and is perfect for adding that extra “je ne sais quoi” to festive dishes!
