Kombucha, the perfect health cocktail for the beginning of autumn
Seven years ago, Pierre Lamaze discovered ‘kombucha’, a health drink that is packed with probiotics and antioxidants...
He began to make it for his personal consumption, but, encouraged by its popularity among his friends, he partnered up with Charles Rey to create the drink ‘Pieuvre Noire’ (black octopus) in 2021. Why the name, you may ask? “When the black tea ferments with the sugar and the kombucha mother, ‘SCOBY’ (Symbiotic Culture Of Bacteria and Yeast) forms and the result is something that looks strangely like tentacles,” explains Pierre.
Based in Décines-Charpieu, the duo now offers a range of five kombuchas – plain, ginger and lemon, mint, spices and génépi – made using quality ingredients sourced from organic farms. The next step? They plan to market a range of kefir and ginger beer.
Available on their premises in Décines-Charpieu (133 Avenue Franklin-Roosevelt, Hall Black, Décines-Charpieu), at La p’tite distrib (19 Boulevard Yves-Farge, Lyon 69007), in the grocery store at the indoor food market Les Halles de la Martinière, and in the outlets of the chain Rue des Producteurs.
