Citrus-peel home-made bitter

To face the cold winter weather, maybe you’re topping up on vitamin C with a glass of fresh orange juice for breakfast? Instead of throwing your organic citrus fruit leftovers in the bin, keep them to create a fantastic zero-waste home-made bitter packed with spices, perfect to add flavour to a tonic or sparkling water.

For four people, you will need the peel from four oranges, five spice seeds of your choice (like cardamom, pink peppercorn, coriander or clove), two star anise fruits, half a teaspoon of black peppercorns, one tablespoon of juniper berries, one lemongrass stalk, three quarters of a cup of caster sugar and half a teaspoon of salt.

Put the citrus peels, spices, sugar and salt in a saucepan and pour over two cups of water. Bring to a boil, reduce the heat and leave to simmer gently with a lid on for 20 minutes. Take off the hob and let the ingredients infuse overnight. Filter your home-made bitter and transfer it to a clean and dry bottle or jar. You can keep your elixir in the fridge for up to two weeks.
