A hazelnut-packed spread
Why go for an Italian import when you can buy local? So went the reasoning of Olivier Mauchamp, founder of Diggers, a chocolate-maker tucked away in Lyon’s Presqu’île district, which has developed its own chocolate spread. The hazelnuts from Lot-et-Garonne, which the craft cocoa roaster is crazy about, are sufficiently “fatty” to be used as the main ingredient (60%) in the recipe, which also includes 25% black chocolate (made on-site using whole cocoa beans) and 15% French beet sugar. In the mouth, the texture is very different to industrially produced spreads: the Diggers chocolate spread is rather thick, but it melts wonderfully on a hot pancake. What’s more, hazelnut chips are mixed in with the spread to vary the texture.
